In a large bowl, combine the shredded chicken, corn, sour cream, mayo, cilantro, red onion, Parmesan, lime juice, chili powder, cumin, and cayenne pepper (if using). Stir until evenly mixed.
Season generously with salt and pepper to taste.
3️⃣ Assemble the Casserole
Transfer the chicken mixture into the prepared baking dish. Spread it out evenly into all corners.
4️⃣ Top It Off
Sprinkle the crumbled Cotija cheese evenly over the top.
