Prepare the base:
- Crush the biscuits into fine crumbs and mix them with the melted butter.
- Press this mixture into the bottom of a springform pan and refrigerate for 30 minutes.
Prepare the cream:
- In a bowl, beat the cream cheese with sugar, vanilla extract, and lemon juice until smooth.
- Whip the heavy cream until firm peaks form, then gently fold it into the cream cheese mixture.
- Pour this mixture over the biscuit base and smooth the surface.
- Refrigerate for at least 4 hours (ideally overnight).
