Once the tofu is crispy, reduce heat to medium-low.
Push the tofu to one side of the pan and add minced garlic to the empty space. Sauté for about 30 seconds until fragrant.
Drizzle soy sauce and maple syrup over the tofu. Toss quickly to coat all cubes evenly.
Remove from heat immediately to prevent the garlic from burning.
Garnish with fresh parsley and an extra drizzle of olive oil before serving.
