1️⃣ Make the Jello
In a heat-safe bowl, whisk together the orange Jello and boiling water until completely dissolved. Let cool to room temperature (about 30 minutes) before using.
2️⃣ Prepare the Pan
Spray a 9-inch springform pan with cooking spray and line the bottom and sides with parchment paper for easy release.
3️⃣ Make the Crust
In a medium bowl, combine graham cracker crumbs, melted butter, and a pinch of salt. Stir until mixture resembles wet sand. Press firmly into the bottom and slightly up the sides of the prepared pan. Freeze for at least 30 minutes while preparing the filling.
4️⃣ Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese with 1 cup of powdered sugar until smooth, about 2 minutes. Set aside.
In a separate bowl, whip the heavy cream with the remaining ½ cup powdered sugar, vanilla extract, and orange zest until stiff peaks form. Gently fold half of the whipped cream into the cream cheese mixture until smooth and combined.
5️⃣ Prepare the Orange Layer
Fold the remaining whipped cream into the cooled orange Jello mixture until evenly combined.
