1️⃣ Sauté Bacon and Vegetables
Preheat the oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add chopped bacon and cook until crispy, about 5–7 minutes. Remove bacon and set aside, leaving a bit of bacon fat in the pan.
Add chopped onion and garlic. Sauté for 2–3 minutes until fragrant and softened. Stir in mushrooms and cook another 5 minutes until golden and moisture is released. Add spinach and sauté until just wilted, about 2 minutes.
2️⃣ Add Chicken and Seasonings
Return bacon to the skillet. Stir in shredded cooked chicken, Italian seasoning, salt, pepper, and optional red pepper flakes. Mix well and remove from heat.
3️⃣ Make the Cheese Sauce
In a large bowl, combine ricotta cheese, 1 cup mozzarella, Parmesan cheese, heavy cream, and chicken broth. Stir until smooth and creamy.
