1ļøā£ Prepare the Shortcrust Pastry
- In a large bowl, combine the cold butter, sugar, flour, cornstarch, baking powder, and salt. Mix until the texture resembles coarse crumbs.
- Add the egg and vanilla essence. Mix gently with a spatula or spoon (do not knead) until the dough just comes together.
- Place the dough between two sheets of cling film and roll out to 4 mm thickness.
- Refrigerate the rolled dough for at least 20 minutes to firm up.
2ļøā£ Cut & Bake
- Preheat oven to 170°C (340°F).
- Cut half the dough into solid discs and the other half into rings (with the center removed), all approximately 4 cm in diameter.
- Place on a baking sheet lined with parchment and bake for 7 minutes, or until lightly golden on the edges.
- Cool cookies completely at room temperature before assembling.
