Classic Whole Wheat Sandwich Bread

Step 1: Activate the Yeast

  1. In a small bowl, combine the warm water and yeast. Stir gently and let sit for 5–10 minutes until frothy — this indicates the yeast is active.

Step 2: Make the Dough

  1. In a large bowl, whisk together the whole wheat flour and salt.
  2. Make a well in the center and pour in the yeast mixture.
  3. Stir until the dough starts to come together.
  4. Turn out onto a lightly floured surface and knead for 5–7 minutes, until smooth and elastic. Add a little extra flour if the dough is sticky.

Step 3: First Rise

  1. Form the dough into a ball and place it in a greased bowl. Cover with a damp cloth.
  2. Let rise in a warm spot for 1 hour, or until doubled in size.

Step 4: Shape and Second Rise

  1. Punch down the dough and turn it onto a floured surface.
  2. Shape into a loaf, tucking the ends under.
  3. Place in a greased 9×5-inch loaf pan.
  4. Cover again with a damp cloth and let rise for 30 minutes, until it rises slightly above the edge of the pan.
