Step 1: Activate the Yeast
- In a small bowl, combine the warm water and yeast. Stir gently and let sit for 5–10 minutes until frothy — this indicates the yeast is active.
Step 2: Make the Dough
- In a large bowl, whisk together the whole wheat flour and salt.
- Make a well in the center and pour in the yeast mixture.
- Stir until the dough starts to come together.
- Turn out onto a lightly floured surface and knead for 5–7 minutes, until smooth and elastic. Add a little extra flour if the dough is sticky.
Step 3: First Rise
- Form the dough into a ball and place it in a greased bowl. Cover with a damp cloth.
- Let rise in a warm spot for 1 hour, or until doubled in size.
Step 4: Shape and Second Rise
- Punch down the dough and turn it onto a floured surface.
- Shape into a loaf, tucking the ends under.
- Place in a greased 9×5-inch loaf pan.
- Cover again with a damp cloth and let rise for 30 minutes, until it rises slightly above the edge of the pan.
