Inspired by our dear friend Nicole’s cozy kitchen, it brings families together with the comforting flavors of tacos, but without all the carbs. Even the pickiest eaters will ask for seconds!   • 10 oz Earthbound Farm Frozen Organic Riced Cauliflower

  • 23 Tbsp oil

  • 2 lbs ground beef

  • 1 small red bell pepper, seeded & chopped

  • 1 small white onion, chopped

  • 4 Tbsp taco seasoning

  • 1 Tbsp tomato paste

  • ½ cup water

  • 3 cups shredded Colby/Jack cheese

  • 1 cup sour cream

Instructions

  • Preheat oven to 350°F (175°C).

  • In a skillet, pan fry riced cauliflower with oil on medium-high heat until lightly browned. Spread evenly in a greased 2-quart casserole dish.

  • In the same skillet, cook ground beef, red pepper, and onion until browned. Drain any extra fat.

  • Add taco seasoning, tomato paste, and water. Stir and let it simmer until most of the liquid evaporates.

  • Layer beef mixture over cauliflower in the casserole dish.

  • Top with cheese and bake for 10–15 minutes until melted and bubbly.

  • Spread sour cream on top. Add your favorite toppings before serving.

Notes

Make it ahead: You can prep the entire dish the night before and just pop it in the oven when you’re ready to eat. Perfect for meal planning or busy weeknights!
