  • ½ cup (100g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 ripe bananas, mashed (about 1½ cups)
  • 1¾ cups (220g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (175g) semisweet chocolate chips
  • 1 cup (120g) chopped walnuts (optional)

Instructions

Servings: 12 muffins

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Mix wet ingredients: In a large bowl, whisk together melted butter, granulated sugar, and brown sugar. Add eggs and vanilla, mixing until smooth.
  3. Add bananas: Mash the bananas and stir them into the batter.
  4. Combine dry ingredients: In a separate bowl, sift flour, baking soda, and salt. Gently fold into the wet mixture until just combined.
  5. Fold in mix-ins: Stir in chocolate chips and walnuts (if using).
  6. Fill muffin cups: Divide batter evenly into the liners (fill almost to the top). Sprinkle extra chocolate chips on top.
  7. Bake for 20-24 minutes, or until a toothpick comes out clean.
