1 lb (450g) ground beef
2 medium sweet potatoes, diced
1 medium zucchini, chopped
1 small onion, diced
2 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon cumin
Salt & pepper to taste
1 tablespoon olive oil
Optional: shredded cheese, chopped parsley
Heat olive oil in a large skillet over medium heat.
Add sweet potatoes and cook 8–10 minutes, stirring occasionally, until softened.
Add onion and garlic, cook 2 minutes.
Stir in ground beef, cook until browned.
Add zucchini, paprika, cumin, salt, and pepper.
Cover and cook 5–7 minutes, until zucchini is tender.
Top with cheese or herbs if using and serve warm.
Dice sweet potatoes small so they cook faster.
Use ground turkey for a lighter option.
