Ultimate Ground Beef Zucchini Sweet Potato Skillet

This one-pan skillet is loaded with goodness—tender sweet potatoes, juicy beef, and garden-fresh zucchini—all sizzling together with bold spices. It’s the kind of meal that makes you feel nourished, without spending all night in the kitchen.

Ingredients

  • 1 lb (450g) ground beef

  • 2 medium sweet potatoes, diced

  • 1 medium zucchini, chopped

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 teaspoon paprika

  • 1/2 teaspoon cumin

  • Salt & pepper to taste

  • 1 tablespoon olive oil

  • Optional: shredded cheese, chopped parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add sweet potatoes and cook 8–10 minutes, stirring occasionally, until softened.

  3. Add onion and garlic, cook 2 minutes.

  4. Stir in ground beef, cook until browned.

  5. Add zucchini, paprika, cumin, salt, and pepper.

  6. Cover and cook 5–7 minutes, until zucchini is tender.

  7. Top with cheese or herbs if using and serve warm.

Notes

  • Dice sweet potatoes small so they cook faster.

  • Use ground turkey for a lighter option.

  • Leftovers are even better the next day!
