Tzatziki Chicken Salad

This Tzatziki Chicken Salad reminds me of sunny lunches by the sea in Greece—simple, fresh, and full of flavor. My uncle used to serve this chilled on pita bread after long walks. It’s become my go-to when I want something light yet satisfying. Give it a try and bring a taste of the Mediterranean to your table!

Ingredients

  • 2 cups cooked chicken breast (shredded or chopped)

  • 1 cup Greek yogurt

  • 1/2 cucumber (grated and squeezed dry)

  • 1 clove garlic (minced)

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp dried dill (or 1 tbsp fresh dill, chopped)

  • 1/4 cup chopped fresh parsley

  • Salt and pepper to taste

Optional: chopped red onion, cherry tomatoes, or kalamata olives for extra zest

Instructions

  • In a bowl, mix the Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, parsley, salt, and pepper.

  • Add the cooked chicken and toss until evenly coated.

  • Chill in the fridge for 30 minutes to let flavors blend.

  • Serve on lettuce wraps, in pita bread, or over a fresh salad.

Notes

  • Use rotisserie chicken for convenience.

  • Add a sprinkle of feta for extra flavor!
