Roasted Baby Potatoes

Roasted Baby Potatoes are a simple yet elegant side dish that pairs well with almost any meal. Their crispy exterior and tender interior make them a crowd-pleaser, perfect for weeknight dinners or special occasions. For extra flavor, try adding fresh herbs like rosemary or thyme before roasting!

Ingredients

Scale
  • 2 lbs (900g) baby potatoes, rinsed, drained, and halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder (or more to taste)
  • ½ tsp ground paprika
  • ½ tsp salt (adjust to taste)
  • Black pepper, to taste
  • Fresh rosemary or thyme sprigs (optional)

For Serving (Optional):

  • Coarse sea salt
  • Cracked black pepper
  • Chopped fresh parsley

Instructions

  1. Preheat Oven:
    • Set oven to 420°F (220°C).
    • Place a rimmed baking sheet in the oven to heat up while preheating.
  2. Season Potatoes:
    • In a large bowl, toss halved potatoes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Roast Potatoes:
    • Carefully remove the hot baking sheet from the oven (use oven mitts!).
    • Lightly grease the pan with oil, then arrange the potatoes cut-side down in a single layer.
    • Tuck rosemary or thyme sprigs between the potatoes for extra flavor.
    • Roast for 25-30 minutes, until tender inside and crispy outside.
  4. Optional Crispy Finish:
    • Flip potatoes cut-side up and broil for 1-2 minutes for extra browning.
  5. Serve:
    • Sprinkle with sea salt, cracked pepper, and fresh parsley (if using).
    • Serve immediately while hot!

Notes

✔ Choose small, firm baby potatoes – Avoid green spots for best texture.
✔ Skip parchment paper – Roasting directly on the pan ensures crispiness.
✔ Don’t overcrowd the pan – Space potatoes evenly for even cooking.
✔ Adjust seasoning after roasting – Some prefer extra salt or herbs at the end.
