2 cups cooked chicken breast, shredded
3 cups shredded Napa or green cabbage
1 cup shredded carrots
1 cup snap peas or bell pepper, thinly sliced
¼ cup green onions, chopped
¼ cup cilantro, chopped
½ cup crunchy chow mein noodles or crushed ramen noodles
2 tablespoons sliced almonds or sesame seeds (optional)
Dressing:
3 tablespoons rice vinegar
2 tablespoons soy sauce
1 tablespoon honey or sugar
1 tablespoon sesame oil
2 tablespoons vegetable oil
½ teaspoon grated fresh ginger (optional)
In a large bowl, combine chicken, cabbage, carrots, snap peas, green onions, and cilantro.
In a small bowl, whisk together dressing ingredients until smooth.
