Ingredients

Scale
  • 2 boneless, skinless chicken breasts

  • 1 cup all-purpose flour

  • 2 large eggs

  • 1 cup breadcrumbs (Italian-style if available)

  • ½ cup grated Parmesan cheese

  • Salt and pepper to taste

  • ½ tsp garlic powder (optional)

  • ½ tsp dried oregano (optional)

  • Olive oil or vegetable oil for frying

  • Lemon wedges for serving

Instructions

  • Prepare the chicken: Slice each breast in half horizontally to make thinner cutlets. Gently pound with a meat mallet until evenly thin.

  • Season: Sprinkle with salt, pepper, garlic powder, and oregano.

  • Set up dredging stations: One plate with flour, one bowl with beaten eggs, and another with breadcrumbs mixed with Parmesan.

  • Coat the chicken: Dip each cutlet first in flour, then in egg, and finally in the breadcrumb-Parmesan mix.

  • Fry: Heat oil in a large skillet over medium heat. Fry chicken until golden brown and cooked through, about 3-4 minutes per side.

  • Drain: Place on paper towels to remove excess oil.

  • Serve: Squeeze fresh lemon juice on top and serve with a side salad or roasted vegetables.

Notes

  • Pound the chicken evenly so it cooks uniformly.

  • Use day-old bread for homemade crumbs for extra crunch.

  • Great with a light arugula salad tossed in olive oil and lemon juice.
