A fun and flavorful twist on a classic taco salad, this Doritos Taco Salad is packed with fresh veggies, seasoned ground beef, beans, and crunchy Doritos chips, all tossed in a creamy, tangy dressing. Perfect for potlucks, weeknight dinners, or game day gatherings!

For the Salad:

  • 1 tbsp olive oil
  • 1 lb ground beef
  • ½ yellow onion, chopped
  • 1 ½ tbsp taco seasoning (homemade or store-bought)
  • 1 head iceberg lettuce (or 6 cups mixed greens), chopped
  • 4 tomatoes, chopped
  • 2 avocados, diced
  • 15 oz kidney beans, rinsed and drained
  • 2 cups shredded cheddar cheese
  • 1 large bag Doritos or Fritos (crushed slightly)

For the Dressing:

  • ¾ cup Miracle Whip (or mayonnaise)
  • ¼ cup sour cream
  • 1 tbsp sugar
  • Juice of 1 lime
  • 1 tbsp taco seasoning
  • 12 tsp Tabasco sauce (adjust to taste)

Instructions

  1. Cook the Beef:
    • Heat olive oil in a skillet over medium heat. Add ground beef and onions, breaking up the meat as it cooks.
    • Once the beef is browned and onions are soft (about 7-8 mins), drain excess fat if needed.
    • Stir in taco seasoning and kidney beans. Cook for 1-2 more minutes, then set aside.
  2. Make the Dressing:
    • In a small bowl, whisk together Miracle Whip, sour cream, sugar, lime juice, taco seasoning, and hot sauce until smooth.
  3. Assemble the Salad:
    • In a large bowl, combine lettuce, tomatoes, avocado, cheese, beef mixture, and crushed Doritos.
    • Pour dressing over the top and toss gently to coat everything evenly.
  4. Serve Immediately to keep the chips crunchy!

Notes & Variations

  • For a layered salad: Omit the avocado, layer lettuce, beef mixture, tomatoes, and cheese in a bowl, then spread dressing on top. Add crushed chips right before serving.
  • Storage: Leftovers (without chips) can be refrigerated for up to 1 day.

  • For extra crunch, add the Doritos just before serving to prevent them from getting soggy.
