Ingredients
Scale
3 cups cooked chicken, chopped (rotisserie or boiled chicken works great)
1 cup red grapes, halved
1/2 small red onion, finely diced
2 stalks celery, diced
1/2 cup mayonnaise (light or regular)
1 tablespoon lemon juice
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Instructions
Prepare the Ingredients: In a large bowl, combine the chopped chicken, halved red grapes, diced red onion, and diced celery.
Make the Dressing: In a small bowl, whisk together the mayonnaise, lemon juice, salt, garlic powder, onion powder, and black pepper. Taste and adjust seasoning if needed.
Combine: Pour the dressing over the chicken mixture and stir until everything is evenly coated.
Serve or Store: Serve immediately as a sandwich filling, over greens, or with crackers. Alternatively, store in an airtight container in the fridge for 3-5 days.
Notes
Use rotisserie chicken for a time-saving shortcut.
For a lighter version, substitute Greek yogurt for half or all of the mayonnaise.
Add a handful of chopped nuts (like almonds or walnuts) for extra crunch.
Let the salad chill in the fridge for 30 minutes before serving to allow the flavors to meld.
