  • 1 cup all-purpose flour

  • 1/2 cup water

  • 2 tbsp unsalted butter

  • 1 tbsp sugar

  • 1/4 tsp salt

  • 1 egg

  • 1/2 tsp vanilla extract

  • 1/2 cup sugar + 1 tsp cinnamon (for coating)

  • Olive oil spray

Instructions

  • In a saucepan, heat water, butter, sugar, and salt until boiling.

  • Stir in flour quickly until a dough forms. Let cool 5 minutes.

  • Mix in egg and vanilla until smooth (dough will be sticky).

  • Pipe small dots onto parchment using a piping bag or spoon.

  • Spray with oil and air fry at 375°F (190°C) for 8–10 minutes or until golden.

  • Toss in cinnamon sugar while warm.

Notes

  • Don’t skip cooling the dough: It helps the egg blend smoothly without cooking in the hot dough.

  • No piping bag? Use a freezer bag with the corner snipped off, or simply scoop with a spoon.

  • Make them mini: Smaller bites cook more evenly and get crispier.

  • Don’t overcrowd: Cook in batches to allow proper air flow in the fryer.
