Every summer, my grandmother would gather whatever was ripe from her garden and toss it into a bowl with a drizzle of olive oil—this salad brings back those sunny porch memories. It’s colorful, refreshing, and full of crunch—perfect for warm days and family gatherings. Great for potlucks or light lunches, and it keeps well for a few days too!
1 medium cucumber, partially peeled and chopped
1 pint cherry tomatoes, halved
1 large or 2 small bell peppers, chopped
½ red onion, chopped
1½ cups fresh corn kernels (about 2 ears)
¼ cup chopped parsley
3 tbsp extra virgin olive oil
2 tbsp red wine vinegar
Salt & pepper to taste
Pinch crushed red pepper flakes
½ cup crumbled goat cheese or feta
In a large bowl, toss cucumber, tomatoes, peppers, onion, corn, and parsley with salt, pepper, and red pepper flakes.
Drizzle with olive oil and vinegar.
Mix well and adjust seasoning to taste.
Crumble cheese on top and give it a gentle toss.
Chill or serve fresh!
