2 cups fresh strawberries, sliced
4 cups fresh baby spinach (or mixed greens)
1/2 cup candied pecans or walnuts
1/4 cup feta cheese (optional)
1/2 cup granola (or crushed pretzels for more crunch)
1/4 red onion, thinly sliced
Balsamic glaze or light vinaigrette dressing
Wash and dry the greens thoroughly.
In a large bowl, toss the greens with the sliced strawberries and red onion.
Add the candied nuts and feta cheese.
Sprinkle the granola (or pretzels) on top just before serving for that perfect crunch.
Drizzle with balsamic glaze or your favorite vinaigrette. Serve chilled.
For extra protein, add grilled chicken or chickpeas.
Swap feta for goat cheese for a creamier flavor.
