This recipe is a sweet reminder of family nights where dinner cooked slowly while we enjoyed each other’s company. 4 boneless, skinless chicken thighs or breasts, cut into chunks
1/2 cup orange marmalade
1/4 cup soy sauce (low sodium)
1/4 cup BBQ sauce
2 garlic cloves, minced
1 tsp grated ginger (optional)
1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
Green onions and sesame seeds for garnish
Place chicken pieces in the slow cooker.
In a bowl, mix orange marmalade, soy sauce, BBQ sauce, garlic, and ginger.
Pour the sauce over the chicken and stir to coat evenly.
Cover and cook on low for 4–5 hours or high for 2–3 hours.
In the last 30 minutes, stir in the cornstarch slurry to thicken the sauce.
Serve with rice or steamed veggies. Garnish with green onions and sesame seeds.
Chicken thighs stay juicier, but breasts work too if you prefer.
