  • 1 lb (450g) boneless chicken breast, diced

  • 1 tbsp olive oil

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 1 small red onion, chopped

  • 1 can (15 oz) black beans, rinsed and drained

  • 1 cup corn (frozen or canned)

  • 1 can (10 oz) diced tomatoes with green chiles

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • Salt and pepper to taste

  • 1 cup shredded cheddar cheese

  • Fresh cilantro (optional)

  • Lime wedges (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Add diced chicken and cook for 6–8 minutes until no longer pink.

  • Stir in peppers and onion, cooking for another 4–5 minutes until softened.

  • Add black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper.

  • Stir well, reduce heat to low, and let simmer for 5 minutes.

  • Sprinkle cheese over the top, cover, and let it melt (about 2 minutes).

  • Garnish with fresh cilantro and a squeeze of lime if desired. Serve hot.

Notes

  • Swap chicken with leftover turkey or rotisserie for even quicker prep.

  • Add cooked rice or quinoa to stretch it into a full meal.
