For the Cake:

  • 2½ cups all-purpose flour
  • 1½ cups granulated sugar

  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon white vinegar

  • 1 teaspoon purple food coloring

For the Frosting:

  • 1 pound cream cheese, softened
  • 2 sticks unsalted butter, room temperature
  • 4 cups confectioners’ sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients:
    In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. Combine Wet Ingredients:
    In a separate bowl, whisk together the vegetable oil, buttermilk, eggs, red and purple food colorings, white vinegar, and vanilla extract until well combined.
  4. Combine Wet and Dry Ingredients:
    Gradually add the wet ingredients to the dry ingredients, mixing until the batter is smooth and evenly colored.
  5. Bake:
    Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool:
    Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  7. Make the Frosting:
    In a large bowl, beat the cream cheese and butter until smooth and creamy. Add the vanilla extract, then gradually mix in the confectioners’ sugar until the frosting is light and fluffy.
  8. Assemble the Cake:
    Once the cakes are completely cool, spread a layer of frosting on top of one cake layer. Place the second layer on top and frost the top and sides of the cake.
