When my kids were young, we made “mini pizzas” for game nights—sticky fingers, big smiles, and the smell of melted cheese in the air. These pizza cupcakes are a fun twist on those nights. They’re easy to whip up, great for sharing, and disappear faster than you can say “pepperoni”! A perfect choice for parties or a quick snack that brings everyone to the kitchen.
1 can refrigerated biscuit dough (8 pieces)
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup mini pepperoni (or chopped regular pepperoni)
1/2 teaspoon Italian seasoning
Optional: chopped bell peppers, olives, mushrooms
Preheat oven to 375°F (190°C). Grease a muffin tin.
Flatten each biscuit and press into the muffin cups to form little crusts.
Spoon 1 tablespoon of pizza sauce into each cup.
Add your toppings: cheese, pepperoni, and any extras.
Sprinkle with Italian seasoning.
Bake for 12–15 minutes, until golden and bubbly.
Let cool 5 minutes before serving.
Use parchment muffin liners for easy cleanup.
Try with cooked sausage or a vegetarian combo.
These reheat well—pop in the air fryer for a quick snack later.
