  • 2 cups pecan halves

Instructions

  1. Make the Dough:
    • In a large mixing bowl or stand mixer fitted with the whisk attachment, beat brown sugar, butter, and vanilla until light and fluffy (about 3 minutes).
    • Add eggs and beat on low until just combined.
  2. Combine Dry Ingredients:
    • In a medium bowl, whisk together flour, salt, and baking soda. Gradually add this mixture to the wet ingredients on low speed until just incorporated.
    • Using a spatula, fold in the pecan halves.
  3. Chill the Dough:
    • Cover the dough and refrigerate for 30 minutes.
    • Preheat the oven to 350°F (175°C) and line 2 baking sheets with parchment paper.
  4. Shape and Bake:
    • Use a small cookie scoop or your hands to form 1.25-inch dough balls. Place them at least 3 inches apart on the baking sheet to allow for spreading.
    • Bake in the center of the oven for 8 minutes or until the edges are lightly golden brown.
    • Optional: Sprinkle with flaky sea salt right after baking for a sweet-and-salty twist.
  5. Toast Pecans (Optional):
    • Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
    • Spread pecans in a single layer and toast for 10-15 minutes, stirring every 5 minutes for even toasting.
