  • 1 cup plain Greek yogurt (whole milk/full fat recommended)
  • ¾ cup peanut butter (creamy or crunchy)
  • ¼ cup vanilla protein powder
  • 12 tbsp maple syrup or honey (adjust to taste)
  • ¼ tsp vanilla extract
  • 1 cup dark chocolate chips
  • Flaked sea salt (optional, for topping)

Instructions

  1. Mix the Base
    • In a bowl, stir together Greek yogurt, peanut butter, protein powder, maple syrup (or honey), and vanilla extract until smooth and creamy.
  2. Spread on Pan
    • Line a quarter sheet pan (or a similar-sized baking dish) with parchment paper.
    • Spread the yogurt mixture evenly into the pan (about ¼ to ½ inch thick). An offset spatula helps make this easier.
  3. Melt Chocolate
    • In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring between each, until smooth.
  4. Top with Chocolate
    • Pour the melted chocolate over the yogurt mixture and spread evenly.
  5. Freeze
    • Place the pan in the freezer for at least 2-3 hours, or until completely firm.
  6. Cut & Serve
    • Once frozen, remove from the freezer, sprinkle with flaky sea salt (if using), and break into pieces or cut with a sharp knife.
    • Let it sit at room temperature for a few minutes before eating for the best creamy texture.

Notes

  • Use full-fat Greek yogurt – Low-fat yogurt can make the bark icy.
  • Let it soften slightly before eating – This keeps it creamy instead of too hard.
  • Store in the freezer – Take out only what you plan to eat to prevent melting.
