  • 3 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Cooking spray

Instructions

1. Prep the Oven and Baking Sheets

  • Preheat the oven to 450°F (230°C).
  • Line 3 baking sheets with foil and lightly spray them with cooking spray. Set aside.

2. Prep the Zucchini

  • In a large mixing bowl, toss the zucchini slices with olive oil, salt, and pepper until evenly coated.

3. Make the Coating

  • In a separate bowl, combine the panko breadcrumbs, Parmesan cheese, oregano, and garlic powder.

4. Coat the Zucchini

  • Dip each zucchini slice into the cheese mixture, pressing gently to ensure the coating sticks to both sides.
  • Place the coated slices in a single layer on the prepared baking sheets.
  • Lightly spray the tops of the zucchini slices with cooking spray for extra crunch.

5. Bake

  • Bake in the preheated oven for 10 minutes, then rotate the pans and bake for another 8-10 minutes, or until the chips are golden brown and crispy.

6. Serve

  • Remove from the oven and transfer the zucchini chips to a serving plate.
  • Serve immediately with your choice of dipping sauce, such as sour cream, ranch dressing, marinara sauce, or pesto.

  • Storage: These chips are best enjoyed fresh. If you have leftovers, store them in an airtight container at room temperature for up to 1 day. Reheat in the oven to restore crispiness.
