No Bake Peanut Butter Oat Cups (4 Ingredients!)

These No-Bake Peanut Butter Oat Cups are a quick, delicious, and healthy treat that requires no oven! A creamy peanut butter and oat base is topped with a smooth layer of melted chocolate, creating a perfect balance of flavors. They’re easy to make, kid-friendly, and perfect for satisfying your sweet tooth without the guilt. Plus, they’re packed with wholesome ingredients like oats, peanut butter, and maple syrup.

Ingredients

Scale
  • 1.5 cups peanut butter (natural, creamy)
  • 1.5 cups oat flour (rolled oats processed finely in a food processor)
  • 1/4 cup maple syrup (or honey)
  • 1 cup chocolate chips (dark, milk, or semi-sweet)
  • 1 tsp coconut oil (optional, for smoother chocolate)

Instructions

  1. Prepare the Peanut Butter Mixture:
    • In a microwave-safe bowl, combine the peanut butter and maple syrup. Microwave for 40-60 seconds until warm and easy to mix. Stir thoroughly until fully combined.
  2. Add Oat Flour:
    • Gradually add the oat flour to the peanut butter mixture. Mix well until the dough is thick but moldable. If the mixture is too dry, add a teaspoon of extra maple syrup or peanut butter at a time until it holds together.
  3. Shape the Cups:
    • Line a muffin pan with cupcake liners or use a silicone muffin pan for easy removal. Scoop the peanut butter oat mixture evenly into the muffin holes and press down firmly with your fingers to create an even layer.
  4. Melt the Chocolate:
    • In a separate microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  5. Top with Chocolate:
    • Pour a layer of melted chocolate over each peanut butter oat cup. Use the back of a spoon to smooth the chocolate. Optionally, sprinkle with flaky salt, sprinkles, or mini chocolate chips before the chocolate sets.
  6. Chill and Set:
    • Refrigerate the cups for 2-3 hours or until the chocolate is completely set. Once firm, carefully remove them from the muffin pan.
  7. Serve and Store:
    • Enjoy immediately or store in an airtight container in the refrigerator for up to 5 days.

Notes

  • These cups are naturally gluten-free if you use certified gluten-free oats.
  • For a nut-free version, substitute peanut butter with sunflower seed butter.
  • If you prefer a softer texture, let the cups sit at room temperature for 5-10 minutes before serving.
