2 large cucumbers, thinly sliced
1/4 red onion, thinly sliced
1/4 cup fresh cilantro, chopped
Juice of 2 limes
1 tbsp olive oil
1/2 tsp chili powder
1/4 tsp paprika
Salt and pepper to taste
Optional: Tajín seasoning or a dash of hot sauce for extra flavor
Peel cucumbers if desired, then slice them thin.
In a large bowl, combine cucumbers, red onion, and chopped cilantro.
In a small bowl, whisk lime juice, olive oil, chili powder, paprika, salt, and pepper.
Pour the dressing over the cucumber mix and toss gently.
Let it chill in the fridge for 15–20 minutes before serving.
Sprinkle with Tajín or a little hot sauce if you like a kick!
Use English cucumbers for fewer seeds and less bitterness. Great as a side dish with tacos or grilled meats!
