Mexican Cucumber Salad

Every summer, my grandmother would cool us down with this simple cucumber salad after playing outside. She added a little spice to keep us awake and smiling! Now, I make it for my own family, and it’s always gone in minutes. It’s light, crunchy, and bursting with Mexican flavor. Try it out and bring some zing to your table today!

Ingredients

  • 2 large cucumbers, thinly sliced

  • 1/4 red onion, thinly sliced

  • 1/4 cup fresh cilantro, chopped

  • Juice of 2 limes

  • 1 tbsp olive oil

  • 1/2 tsp chili powder

  • 1/4 tsp paprika

  • Salt and pepper to taste

  • Optional: Tajín seasoning or a dash of hot sauce for extra flavor

Instructions

  • Peel cucumbers if desired, then slice them thin.

  • In a large bowl, combine cucumbers, red onion, and chopped cilantro.

  • In a small bowl, whisk lime juice, olive oil, chili powder, paprika, salt, and pepper.

  • Pour the dressing over the cucumber mix and toss gently.

  • Let it chill in the fridge for 15–20 minutes before serving.

  • Sprinkle with Tajín or a little hot sauce if you like a kick!

Notes

Use English cucumbers for fewer seeds and less bitterness. Great as a side dish with tacos or grilled meats!
