This dish has a soft spot in my heart—it was my mom’s go-to when guests popped by unexpectedly. Just a few ingredients and some oven magic turned simple chicken into something creamy, tender, and downright irresistible. 2 boneless, skinless chicken breasts
1/2 cup mayonnaise (or Greek yogurt for a lighter twist)
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
Salt & pepper, to taste
Preheat oven to 375°F (190°C). Grease a small baking dish.
In a bowl, mix mayo, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
Place chicken breasts in the dish. Spread the mayo mixture evenly over the top.
Bake uncovered for 25–30 minutes, or until chicken reaches 165°F.
Broil for the last 2 minutes for a golden top, if desired.
Let rest a few minutes before serving.
Use a meat thermometer for perfectly cooked, juicy chicken.
This pairs well with roasted veggies, rice, or mashed potatoes.
