With tender chicken in a rich, garlicky Parmesan cream sauce, sun-dried tomatoes, and herbs, this dish is perfect over pasta or rice for a romantic dinner or an impressive weeknight meal.

Ingredients

Scale
  • 3 large chicken breasts (boneless, skinless, sliced into thin cutlets)
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 6 tbsp (50g) all-purpose flour
  • 2 tbsp (30ml) olive oil
  • 2 tbsp (28g) unsalted butter
  • 3 cloves garlic (minced)
  • 1 cup (240ml) chicken stock
  • 1 cup (240ml) heavy cream (double cream in the UK)
  • ½ cup (43g) Parmesan cheese (grated)
  • 1 tsp chili flakes
  • ¼ tsp oregano
  • ¼ tsp thyme
  • ⅓ cup sun-dried tomatoes (chopped)
  • 1 tbsp fresh basil leaves (chopped, for garnish)

Instructions

  1. Prepare the Chicken:
    • Season chicken cutlets with salt and pepper, then dredge in flour, shaking off excess.
  2. Brown the Chicken:
    • Heat olive oil and butter in a large skillet over medium heat.
    • Cook chicken for 4-5 minutes per side until golden and cooked through. Transfer to a plate and cover.
  3. Make the Sauce:
    • In the same skillet, sauté garlic for 1 minute until fragrant.
    • Pour in chicken stock, scraping up any browned bits.
    • Reduce heat to medium-low, then add heavy cream and Parmesan. Stir until cheese melts.
    • Season with chili flakes, thyme, oregano, salt, and pepper.
  4. Combine & Serve:
    • Add sun-dried tomatoes, then return chicken to the skillet. Simmer for 2-3 minutes until sauce thickens.
    • Garnish with fresh basil and serve over pasta or rice.

Notes

✔ Slice chicken evenly (¼-inch thick) for even cooking.
✔ Use freshly grated Parmesan for better melting and flavor.
✔ Avoid overcrowding the pan—cook chicken in batches if needed.
✔ Don’t substitute heavy cream—half-and-half won’t thicken properly.
