1/2 cup butter (melted)
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 cup granulated sugar (divided)
1 cup milk
2 tbsp lemon zest
1/4 cup fresh lemon juice
1 cup hot water
Preheat your oven to 350°F (175°C). Pour melted butter into a 9×9-inch baking dish.
In a bowl, whisk together flour, baking powder, salt, and 3/4 cup sugar.
Add milk and lemon zest, stirring just until combined. Pour batter evenly over the melted butter—don’t stir!
Mix lemon juice, hot water, and remaining 1/4 cup sugar. Carefully pour over the batter. Again, do not stir.
Bake for 40–45 minutes, until the top is golden and set.
Let cool slightly before serving warm—delicious with a scoop of vanilla ice cream!
