These Kool-Aid Fizzy Marshmallows are soft, colorful, and even a little fizzy thanks to a secret ingredient. They’re perfect for sharing sweet moments with family.   • 3 envelopes unflavored gelatin

  • 1 cup cold water, divided

  • 1 ½ cups granulated sugar

  • 1 cup light corn syrup

  • 1 packet Kool-Aid (your favorite flavor!)

  • 1 tsp baking soda (for the fizzy effect)

  • Powdered sugar for dusting

Instructions

  1. In a large mixing bowl, sprinkle gelatin over ½ cup cold water. Let sit.

  2. In a saucepan, combine the remaining ½ cup water, sugar, and corn syrup. Stir over medium heat until sugar dissolves, then bring to a boil.

  3. Heat until the mixture reaches 240°F (soft ball stage) on a candy thermometer.

  4. Carefully pour the hot syrup into the gelatin while mixing with a hand or stand mixer on low.

  5. Increase the speed to high and whip for about 10 minutes until thick and fluffy.

  6. Add Kool-Aid powder and baking soda; mix gently to combine.

  7. Pour the mixture into a greased 9×9-inch pan dusted with powdered sugar.

  8. Let it sit uncovered at room temperature for 6–8 hours or overnight.

  9. Once set, dust the top with more powdered sugar, cut into squares, and enjoy!

  • Use a candy thermometer to get the sugar temperature just right!
