Ingredients

  • 2 cups cooked, shredded chicken

  • 1 cup buffalo wing sauce (mild or hot)

  • 1 cup ranch dressing or blue cheese dressing

  • 2 cups shredded cheddar cheese

  • 1/2 cup cream cheese, softened

  • 2 jalapeños, sliced (remove seeds for less heat)

  • 1/2 cup chopped green onions

  • 2 cups frozen cauliflower rice (or cooked pasta if preferred)

  • 1/2 tsp garlic powder

  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, mix cream cheese, buffalo sauce, and ranch dressing until smooth.

  3. Add in chicken, cauliflower rice, garlic powder, salt, pepper, half the cheddar cheese, green onions, and jalapeños.

  4. Pour into a greased 9×13″ baking dish.

  5. Sprinkle remaining cheese on top.

  6. Bake uncovered for 25–30 minutes, or until bubbly and golden.

  7. Let cool for 5–10 minutes before serving.
