Hot Honey Feta Chicken

I’ve given it a twist with creamy feta and a drizzle of hot honey that brings a kick of heat and a kiss of sweetness. It’s one of those meals that feels fancy but is so easy to make.   • 2 boneless skinless chicken breasts

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

  • 1/4 cup crumbled feta cheese

  • 2 tbsp hot honey (store-bought or homemade: honey + chili flakes)

  • Fresh parsley or thyme for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C).

  • Rub chicken with olive oil, paprika, garlic powder, salt, and pepper.

  • Place in a baking dish and bake for 25–30 minutes until fully cooked.

  • Remove from oven, sprinkle with feta, and drizzle with hot honey.

  • Return to oven for 5 more minutes to let the cheese melt slightly.

  • Garnish with fresh herbs and serve with rice, roasted veggies, or a fresh salad.

Notes

  • Make your own hot honey: Mix 1/4 cup honey with 1/2 tsp red chili flakes. Warm slightly to blend the flavors—adjust the spice to your taste.

  • Grill it instead: For a smoky flavor, grill the chicken and then top with feta and hot honey just before serving.

  • Add crunch: Top with toasted nuts like almonds or walnuts for a bit of texture.

  • Balance the heat: Serve with a side of creamy mashed potatoes, couscous, or a cool cucumber salad to balance the spice.

  • Marinate for more flavor: Let the chicken sit in olive oil, lemon juice, and spices for 1–2 hours before baking.
