This dish takes me back to summer evenings when we’d gather in the backyard, music playing, and the smell of grilled chicken in the air. I’ve given it a twist with creamy feta and a drizzle of hot honey that brings a kick of heat and a kiss of sweetness. It’s one of those meals that feels fancy but is so easy to make. Share it with someone who loves bold flavors and good company!
2 boneless skinless chicken breasts
1 tbsp olive oil
Salt & pepper to taste
1/2 tsp paprika
1/2 tsp garlic powder
1/4 cup crumbled feta cheese
2 tbsp hot honey (store-bought or homemade: honey + chili flakes)
Fresh parsley or thyme for garnish (optional)
Preheat oven to 400°F (200°C).
Rub chicken with olive oil, paprika, garlic powder, salt, and pepper.
Place in a baking dish and bake for 25–30 minutes until fully cooked.
Remove from oven, sprinkle with feta, and drizzle with hot honey.
Return to oven for 5 more minutes to let the cheese melt slightly.
Garnish with fresh herbs and serve with rice, roasted veggies, or a fresh salad.
Make your own hot honey: Mix 1/4 cup honey with 1/2 tsp red chili flakes. Warm slightly to blend the flavors—adjust the spice to your taste.
Grill it instead: For a smoky flavor, grill the chicken and then top with feta and hot honey just before serving.
Add crunch: Top with toasted nuts like almonds or walnuts for a bit of texture.
Balance the heat: Serve with a side of creamy mashed potatoes, couscous, or a cool cucumber salad to balance the spice.
Marinate for more flavor: Let the chicken sit in olive oil, lemon juice, and spices for 1–2 hours before baking.
