8 oz elbow macaroni or pasta of choice
1 lb boneless chicken breast, diced
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
2 tbsp honey
1/2 tsp crushed red pepper flakes
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk
1 1/2 cups shredded cheddar cheese
1/2 cup shredded mozzarella
Optional garnish: chopped parsley, extra honey drizzle
Cook pasta according to package instructions. Drain and set aside.
In a skillet, heat olive oil. Season chicken with salt, pepper, and paprika. Cook until browned and fully cooked.
Add honey and red pepper flakes to the chicken. Toss to coat.
In a separate pan, melt butter. Whisk in flour and cook for 1 minute.
Slowly whisk in milk and bring to a simmer until thickened.
Stir in cheeses until smooth and melted.
Add cooked pasta and honey-pepper chicken to the cheese sauce. Mix well.
Serve warm, garnished as desired.
Use rotisserie chicken to save time.
Adjust honey and pepper flakes to your spice preference.
Makes great leftovers—just add a splash of milk when reheating.
