For the fruit gel (outer layer):
1 cup 100% fruit juice (like strawberry, mango, or grape)
2 tbsp grass-fed gelatin (or agar agar for vegan option)
1 tbsp honey or maple syrup (optional)
For the fruit “gush” filling:
1/4 cup fruit puree (like blended berries or mango)
1 tbsp chia seeds (for thickening)
1 tsp honey (optional)
Make the filling: Mix fruit puree, chia seeds, and honey. Let it sit for 10–15 minutes to thicken.
Prepare molds: Use small silicone molds or ice cube trays.
Create outer layer: Warm the juice in a saucepan (don’t boil). Stir in gelatin until dissolved. Add sweetener if desired.
Assembly: Pour a small amount of the juice mix into each mold. Let it set for a few minutes in the fridge.
Add a tiny bit of the fruit-chia filling in the center, then top off with more juice-gel mix.
Chill for at least 1 hour until fully set. Pop out and enjoy
Use silicone molds: Small gummy or chocolate molds work best to get the classic Gusher shape.
Let the filling thicken: Don’t rush the chia mixture — give it 10–15 minutes so it becomes gooey and won’t leak.
Don’t overfill: When adding the chia filling, use a small spoon or dropper — too much and the Gusher may not seal properly.

Store them right: Keep in the fridge in an airtight container for up to 5 days — they’ll stay fresh and chewy.
Make it vegan: Use agar-agar instead of gelatin — just follow the package instructions, as it sets a bit differently.
