Ingredients

Scale

For the Pop-Tarts:

  • 2 (9-inch) pie crusts (store-bought or homemade)
  • 1 tablespoon melted butter

For the Brown Sugar Filling:

  • ½ cup dark brown sugar
  • 2 tablespoons flour
  • 2 tablespoons cinnamon (reduce to 1 tablespoon for a milder taste)
  • 12 tablespoons melted butter

For the Brown Sugar Glaze:

  • ½ cup powdered sugar
  • 1 teaspoon cinnamon
  • 12 tablespoons warm water

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
  2. Prepare the Filling:
In a small bowl, mix together the dark brown sugar, flour, cinnamon, and melted butter. The mixture should resemble damp sand. Add a bit more butter if the mixture seems too dry. Set aside.
  3. Assemble the Pop-Tarts:
    • Roll out one pie crust on a parchment-lined baking sheet.
    • Brush the crust with 1 tablespoon of melted butter.
    • Spread the brown sugar filling evenly over the crust, leaving a 1-inch border around the edges.
    • Gently press the filling into the crust.
    • Place the second pie crust on top and press the edges together to seal. Use a fork to crimp the edges.
  4. Bake:
Bake for 20-25 minutes, or until the crust is golden brown. Rotate the baking sheet halfway through for even browning.
  5. Cool:
Allow the pop-tart to cool completely on the baking sheet for about 1 hour.
  6. Make the Glaze:
In a small bowl, whisk together the powdered sugar, cinnamon, and warm water until smooth. The glaze should be fluid but not runny.
  7. Glaze and Serve:
Drizzle the glaze over the cooled pop-tart. Let it set for a few minutes, then slice into individual servings.

Notes

  • Use store-bought pie crust for convenience, or make your own if you prefer.
  • Adjust the cinnamon to your taste—less for a milder flavor, more for a bold kick.
  • Ensure the filling is slightly damp but not overly wet for the best texture.
  • Let the pop-tarts cool completely before glazing to avoid a runny mess.
