1️⃣ Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
2️⃣ Mix ingredients – In a large bowl, combine oats, applesauce, peanut butter, flaxseed, chia seeds, maple syrup, cinnamon, and vanilla. Stir until well blended.
3️⃣ Shape cookies – Scoop ~¼ cup of dough per cookie, roll into balls, and flatten slightly on the baking sheet (they won’t spread much).
