Healthy Oatmeal Protein Cookies

Ingredients

  • 3 cups old-fashioned rolled oats

  • 1 cup applesauce (or mashed banana)

  • 1 cup peanut butter (or any nut butter)

  • ¼ cup ground flaxseed

  • ¼ cup chia seeds

  • ¼ cup pure maple syrup

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

Instructions

  • Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.

  • In a medium bowl, mix all the ingredients until fully combined.

  • Scoop out 12 equal portions (about a heaping ¼ cup each), roll into balls, and flatten gently with your palm.

  • Arrange on the prepared baking sheet and bake for 15 minutes.

  • Let them cool completely and enjoy!

  • Store in an airtight container at room temperature for up to 7 days.

Notes

✅ For crispier cookies, bake an extra 2-3 minutes.
✅ Add-ins: Dark chocolate chips, raisins, or chopped nuts for extra flavor.
✅ No peanut butter? Use almond or sunflower seed butter instead.
✅ Make them sweeter: Add 1-2 tbsp more maple syrup if desired.
