  • 1/2 cup mashed ripe banana (or applesauce)

  • 1/4 cup honey or maple syrup

  • 1/2 cup nut butter (like peanut or almond)

  • 1/4 cup chopped nuts or seeds (optional)

  • 1/4 cup dried fruit (like raisins or cranberries)

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract

  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper.

  2. In a bowl, mix oats, mashed banana, honey, and nut butter until well combined.

  3. Stir in cinnamon, vanilla, salt, dried fruit, and nuts if using.

  4. Press the mixture firmly into the baking pan.

  5. Bake for 20–25 minutes or until lightly golden.

  6. Let cool completely, then cut into bars.
