Ground Chicken Caprese

This dish takes me back to family dinners where everyone gathered around the table, chatting and laughing while the aroma of garlic and basil filled the kitchen. Ingredients

  • 1 lb ground chicken

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • Salt and pepper to taste

  • 1 tsp Italian seasoning

  • 2 medium tomatoes, chopped

  • 1 cup shredded mozzarella cheese

  • Fresh basil leaves

  • Balsamic glaze (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.

  2. Add garlic and cook until fragrant (about 30 seconds).

  3. Add ground chicken, season with salt, pepper, and Italian seasoning.

  4. Cook for 7–10 minutes, breaking it up with a spoon, until fully cooked.

  5. Stir in chopped tomatoes and cook for another 2–3 minutes.

  6. Sprinkle mozzarella over the top, cover, and let it melt (about 2 minutes).

  7. Garnish with fresh basil and a drizzle of balsamic glaze.

Notes

  • Great over rice, pasta, or zucchini noodles.
