2 boneless, skinless chicken breasts
1 cup fresh mango chunks
1 cup fresh pineapple chunks
2 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon honey
Juice of 1 lime
2 garlic cloves, minced
Salt and pepper to taste
Fresh cilantro (optional, for garnish)
Make the marinade: In a blender, combine mango, pineapple, olive oil, soy sauce, honey, lime juice, and garlic. Blend until smooth.
Marinate the chicken: Place chicken breasts in a zip-top bag or bowl and pour in the marinade. Cover and refrigerate for at least 1 hour (or up to overnight for deeper flavor).
