It’s simple, delicious, and a true crowd-pleaser. Try it out for your next family meal—it might just become your new favorite.
For the Chicken:
6 boneless, skinless chicken thighs
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
For the Green Goddess Sauce:
1/2 cup mayonnaise
1/4 cup sour cream or Greek yogurt
1/2 cup fresh parsley
1/4 cup fresh chives
2 tbsp fresh tarragon (or basil as substitute)
2 tbsp lemon juice
1 garlic clove
Salt and pepper to taste
Prep the Chicken: In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and pepper. Rub this mixture onto the chicken thighs.
Grill: Preheat your grill or grill pan to medium-high. Cook chicken for about 5-7 minutes per side until cooked through and nicely charred.
Make the Sauce: In a blender or food processor, blend all Green Goddess ingredients until smooth and creamy.
Serve: Plate the grilled chicken and drizzle with the sauce. Add a fresh side salad or steamed veggies for a complete meal
Marinate the chicken for 30 minutes beforehand for extra flavor.
Sauce keeps in the fridge for 3 days—great for dipping veggies or spreading on sandwiches!
Use skin-on thighs for more flavor if you like a bit of crisp.
