Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line an 8-inch baking pan with parchment paper or foil for easy removal.
  2. Make the Crust:
    • Place 12 Golden Oreos in a food processor and pulse until finely crushed.
    • Add the melted butter and pulse again until the crumbs are evenly coated.
    • Press the mixture firmly into the bottom of the prepared pan.
    • Bake for 5 minutes, then remove and let cool on the counter.

    • In a small pot, combine the diced strawberries, 1 tablespoon sugar, and 1 tablespoon water.
    • Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.
    • In a small bowl, mix the lemon juice and cornstarch, then stir into the strawberry mixture. Simmer for an additional minute until thickened.
    • Transfer the mixture to the food processor and pulse until smooth. Set aside.
  4. Make the Cheesecake Filling:
    • In the food processor (no need to clean it), combine the cream cheese, sour cream, sugar, vanilla extract, and egg. Pulse until smooth and well combined.
    • Pour the filling over the cooled Oreo crust.
  5. Add the Strawberry Swirl:
    • Dollop half of the strawberry sauce over the cheesecake filling. Use a knife or toothpick to swirl it gently into the filling.
    • Reserve the remaining sauce for serving or other uses (like adding to lemonade!).
  6. Bake the Cheesecake Bars:
    • Reduce the oven temperature to 325°F (160°C).
