For the Garlic Bread Meatball Bombs:

  • 12 dinner rolls
  • 12 cooked meatballs (homemade or store-bought)
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Cooking spray
  • Fresh parsley (optional, for garnish)

For the Garlic Butter:

  • 1/2 cup salted butter
  • 3 cloves garlic, finely minced
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper

For the Sauce:

  • 1/2 cup sun-dried tomato pesto
  • 2 cups marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Meatballs:
    • If using frozen meatballs, cook them according to the package instructions. If making homemade meatballs, prepare and cook them now. Set aside.
  2. Make the Garlic Butter:
    • In a small saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant and lightly browned, about 2-3 minutes. Remove from heat and let cool slightly.
    • Stir in the parmesan cheese, dried parsley, dried oregano, and black pepper. Set aside.
  3. Prepare the Sauce:
    • In a bowl, whisk together the sun-dried tomato pesto, marinara sauce, and olive oil. Set aside.
  4. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with cooking spray.
  5. Assemble the Bombs:
    • Using a sharp knife, carefully hollow out the top of each dinner roll, making sure not to puncture the bottom. The hole should be slightly larger than your meatballs.
    • Place the hollowed rolls into the prepared baking dish.
    • Brush the inside of each roll generously with the prepared garlic butter.
    • Spoon about 1 tablespoon of the sauce mixture into each roll.
    • Place one cooked meatball into each roll, then top with more sauce.
    • Sprinkle shredded mozzarella cheese evenly over the top of each roll. Finish with a sprinkle of Italian seasoning.
  6. Bake:
    • Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Remove from the oven and let cool slightly. Use a sharp knife to separate the rolls if needed.
    • Garnish with fresh parsley if desired, and serve warm.
