  • 1/2 red bell pepper, thinly sliced

  • 1/2 yellow bell pepper, thinly sliced

  • 1 small carrot, shredded

  • 1/4 cup red cabbage, thinly sliced

  • A handful of fresh spinach leaves

  • Salt and pepper to taste

Instructions

  • Spread hummus evenly over each tortilla.

  • Layer vegetables: Start with spinach, then peppers, cucumber, carrot, and cabbage.

  • Season lightly with salt and pepper.

  • Roll tightly from one edge, then slice each roll into 3–4 bite-size pieces.

  • Serve chilled or at room temperature.
