Ingredients

  • 2 ripe mangoes, peeled and diced

  • 1/2 red onion, finely chopped

  • 1 red bell pepper, diced

  • 1 small cucumber, peeled and diced (optional for crunch)

  • 1 small jalapeño, seeded and minced

  • Juice of 1 lime

  • A handful of fresh cilantro, chopped

  • Salt to taste

Instructions

  • In a medium bowl, combine diced mangoes, red onion, bell pepper, cucumber, and jalapeño.

  • Squeeze fresh lime juice over the mixture.

  • Add chopped cilantro and a pinch of salt.

  • Mix everything gently until well combined.

  • Chill in the fridge for at least 15 minutes to let flavors meld.

  • Serve cold and enjoy with chips or as a topping for grilled chicken or fish!

Notes

  • For a sweeter salsa, add a dash of honey.

  • Not a fan of heat? Skip the jalapeño or use a milder chili.
