2 ripe mangoes, peeled and diced
1/2 red onion, finely chopped
1 red bell pepper, diced
1 small cucumber, peeled and diced (optional for crunch)
1 small jalapeño, seeded and minced
Juice of 1 lime
A handful of fresh cilantro, chopped
Salt to taste
In a medium bowl, combine diced mangoes, red onion, bell pepper, cucumber, and jalapeño.
Squeeze fresh lime juice over the mixture.
Add chopped cilantro and a pinch of salt.
Mix everything gently until well combined.
Chill in the fridge for at least 15 minutes to let flavors meld.

For a sweeter salsa, add a dash of honey.
