French Onion Meatloaf

A comforting twist on classic meatloaf, inspired by the rich flavors of French onion soup! This recipe combines caramelized onions, savory beef and pork, and a creamy Gruyère cheese filling, all topped with a delicious Worcestershire-infused gravy. Perfect for a hearty family dinner.

  • 1 lb (450g) ground beef
  • ½ lb (225g) ground pork
  • 1 large onion, thinly sliced
  • 2 tbsp butter
  • ¼ cup all-purpose flour
  • 2 cups beef broth
  • ¼ cup Worcestershire sauce
  • ½ cup grated Gruyère cheese
  • 1 large egg
  • ½ cup breadcrumbs
  • ¼ tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. Caramelize the onions:
    • In a large skillet, melt butter over medium heat.
    • Add sliced onions and cook, stirring occasionally, until golden brown and caramelized (20-25 mins).
  2. Make the gravy:
    • In the same skillet, add flour and cook for 1 minute, stirring.
    • Gradually whisk in beef broth until smooth. Simmer for 5 mins until thickened.
    • Stir in Worcestershire sauce, then set aside.
  3. Prepare the meatloaf mixture:
    • In a large bowl, combine ground beef, pork, caramelized onions, Gruyère, egg, breadcrumbs, thyme, salt, and pepper. Mix well.
  4. Bake the meatloaf:
    • Preheat oven to 350°F (175°C).
    • Press the mixture into a loaf pan and bake for 1 hour, or until internal temperature reaches 160°F (71°C).
  5. Rest & serve:
    • Let meatloaf rest for 10 minutes before slicing.
    • Serve warm with the reserved gravy.
