Ingredients

Base Ingredients:

▢ Cooking spray or oil (for greasing)
▢ 1 large tortilla (8-10 inches)
▢ 3 large eggs
▢ ⅓ cup cottage cheese
▢ Salt & black pepper (to taste)

Flavor Option 1: Veggie Delight

▢ Diced tomatoes
▢ Diced green peppers
▢ Chopped spinach or arugula
▢ ¼ cup shredded mozzarella

Flavor Option 2: Mediterranean Style

▢ Diced tomatoes
▢ Kalamata olives
▢ Thinly sliced red onions
▢ Spinach
▢ Feta cheese
▢ Mozzarella cheese

Instructions

1️⃣ Preheat oven to 350°F (175°C). Lightly grease a round baking dish (similar in size to the tortilla).

2️⃣ Place the tortilla at the bottom of the dish, pressing it down to form the crust.

3️⃣ Whisk together eggs, cottage cheese, salt, and pepper in a bowl until smooth. Pour over the tortilla.

4️⃣ Add toppings:

  • For Veggie Delight, layer tomatoes, peppers, spinach, and mozzarella.
  • For Mediterranean Style, add tomatoes, olives, red onions, spinach, feta, and mozzarella.

5️⃣ Bake for 20-25 minutes until the eggs are set and the top is golden.
