  • 6 large eggs
  • 1 cup milk (whole or 2%)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 2 cups bread cubes (optional, for a firmer texture)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • ½ cup diced bell peppers (optional)
  • ½ cup chopped spinach (optional)
  • ¼ cup diced onions (optional)

Instructions

1. Prep the Sausage

  • In a skillet over medium heat, cook the sausage until browned, breaking it into crumbles.
  • Drain excess grease and set aside.

2. Make the Egg Mixture

  • In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and smoked paprika.

3. Assemble the Casserole

  • Grease a 9×13-inch baking dish.
  • Layer in the cooked sausage, bread cubes (if using), cheese, and any optional veggies.
  • Pour the egg mixture evenly over the top.

4. Bake

  • Preheat oven to 375°F (190°C).
  • Bake for 30–40 minutes, or until the center is set and the top is golden.
